This „00“ is a universal flour used in Italy with unique characteristics: no lumps (anti-grumi) – and no need to sift! It is ideal for preparing any kind of salted or sweet product, this flour is particularly fit for gnocchi, cream and béchamel, but – above all- to prepare a nice fresh pasta which does not turn dark. The mill in the little town of Coccolia, halfway between Ravenna and Forlì, was built by the family of the famous Florentine Pier Capponi, and has been grinding wheat into flour since 1445. And since 1923, this historic mill has belonged to the Spadoni family. Today, the company is led by Leonardo Spadoni, who has chosen to invest in cutting-edge milling technology, with the aim of guaranteeing superlative quality for all his customers.
